Billo started with a single question: why does the food we grew up with never look like it belongs on a nice table?
The Beginning
Born in a kitchen, raised on chai.
Billo's founder grew up between Lahore and Dubai — eating halwa puri on Sunday mornings, drinking doodh patti from a roadside dhaba, and never quite finding those same flavours presented with the care they deserved.
The ice cream side of Billo came first. A curiosity: what happens when you take kulfi technique — slow-reduced milk, real pistachios, bloomed saffron — and apply Western ice cream craft to it? Eight flavours later, the answer was clear.
Ice Cream World

The café is simpler: a place where you can get the best bun kebab in Oud Metha, a proper Kashmiri chai, and nihari that simmered overnight. No fusion. No menu in twelve fonts. Just food that tastes like home.
